Canning Jars

Just wondering if anyone has any standard mason, ball jars eating up space?
Pints specifically.

I was just admiring some jars at Menard's
the other day. Thought I might try canning
some of my tomatoes. Never tried it, new adventure,
but it sure would be a wonderful thing to taste a
matoe with flavor in the middle of January.
...What else can we do now except roll down the window and let the wind blow back your hair...

You have to be careful canning tomatoes. Salmonella is possible if you don't use a pressure cooker (or cook the tomatoes, i.e. making sauce) because tomatoes are so low in acid now.

The Better Homes and Gardens Home Canning Cookbook (1973) had this note:
"Several new tomato varieties are relatively low in acid content. This may
interfere with the tomatoes keeping quality when processed in a boiling
water bath. Because you may not know the acidity of the tomatoes you are
canning, add 1/2 teaspoon lemon juice to each pint jar or 1 teaspoon to
each quart. This will ensure a correct acid level without affecting the
flavor."
"Always carry a flagon of whiskey in case of snakebite and furthermore always carry a small snake."

Ah, will do...I planted 14 this year, and it looks to be
a good crop, my Early Girls are flowering....

And so are my weeds lol

Ah, don't worry about Bear getting salmonella.  You wouldn't
believe some of the things he eats!!  Salmonella itself would
probably be afraid to enter Bears digestive system!!
